Homemade Chicken Pot Pie {recipe}

Today I thought I'd share with your one of our go-to recipes around here; Sort of Homemade chicken pot pie.


Keep in mind, you can cut this recipe in half and make it smaller but we're a big bunch and I made extra to take to a friend.
You will need all of the following (Plus another can of cream of chicken or mushroom){I've actually used gravy before and that was pretty stinkin' tasty too!}

I used: 5 med/large potatoes, 4 carrots, a pound of fresh green beans and 3/4 bag of frozen peas.
Also: boiled chicken, shredded or diced, however you prefer.
And you could use corn but David doesn't much care for corn so I leave it out.
Anyway, dice up your veggies and bring them to a nice boil until they're soft (I actually cook them in my chicken water and add chicken bouillon to it to add a bit more flavor).


Mix all of your ingredients together in a giant bowl, make sure it's not going to be too dry (hence my extra can of Cream of mush/chicken-oops)


DO NOT FORGET TO SPRAY YOUR PAN! I'm a HUGE user of PAM Cooking Spray! It leaves 99% less residue than butter or bargain-brand cooking sprays!  I once made Maddie a birthday cake and forgot to spray the pan with PAM first- it wasn't a pretty site.  It took a lot of extra frosting to hide all of the missing cake chunks.  Thankfully she was like 2 and didn't even notice or care but I was devastated! I use PAM for everything now, even the things that say not to spray the pan. I still do just for safe measures.


Next, make one of your pie crusts, spray your pan, carefully add the first pie crust to the bottom of your pan, fill with your bowl of everything, top with the second pie crust. (if you split this recipe in half, you'll only need one box of pie crust).


Cut out a cute little design in your top pie crust.
Pop in the oven, 375 for about 30 minutes (oven temp may vary)


YUM! Cut up, serve and enjoy.
I like to add some cheese and hot sauce to mine.

  11. Recipe looks delicious! I took one of Steve's grandmother's recipes and tweaked it a bit recently and it was HEAVENLY. I'm thinking about sharing it, but only because I hate to keep good things like that to myself. lol (stuffing mix was involved. And velveeta cheese slices ohmyyum)

  14. My favorite holiday dish is a corn souffle. We always take it and the family raves about it. (They have no idea, I think, how much cheese, butter, and sweetened condensed milk go into that souffle!)
